Thai Basil Chicken (Pad Ka Pow Chicken)

INGREDIENTS: (1 Serving) 
1 cup fresh boneless and skinless chicken thighs or chicken breast (ground)
1 to 2 cloves fresh garlic (finely chopped)
1 or 2 fresh Thai chilies (chopped) or 1-2 fresh jalapeno cut up
¼ cup sliced onion
¼ cup sliced carrot
¼ cup sliced bell pepper
¼ cup broccoli cut up
½ cup sliced fresh mushroom
1 ¼ tablespoons fish sauce or 1 ¼ tablespoons light soy sauce
1 teaspoon brown sugar
1 teaspoon black soy sauce
10 to 15 leaves of Thai basil leaves or Holy basil leaves (stems removed)
2 dashes ground white pepper
1 tablespoon vegetable oil or olive oil

Heat the oil into a wok over medium heat, add chopped garlic and fresh chilies and fry until aromatic. Then add the fresh chicken meat into the wok. Use the spatula to quickly stir-fry and break the ground chicken meat into small lumps.
When the chicken meat changes color, add the seasonings (fish sauce or soy sauce, palm sugar, and black  soy sauce) and continue to stir-fry.
Add in all sliced vegetable, stir fry for 1 minute.
Last step add in the basil leaves and do a few quick stirs until the basil leaves are wilted and you smell the exotic fragrance of the basil leaves.
Sprinkle two dashes of pepper powder into the dish, do a final stir, dish out and serve immediately.

Meditation Center of Alabama hosting public lecture called “Deepening your practice in Meditation” on Wednesday, September 10th. It will be held from 6:30 p.m. – 8:30 p.m. at the University of South Alabama Main Library in room 181. The guest lecturer is Ven. Piya from California.

Meditation Center of Alabama is a non profit organization located at 3821 Airport Boulevard in Mobile, Ala.

We have been teaching people from all walks of life to meditate and find inner peace and happiness for more than 4 years in Mobile.

Every week we offer 3 classes on Monday at 6:00 pm, Wednesday at 5:30 pm and Thursday at 6:30 pm. We also offer a free vegetarian buffet afterwards at Bangkok Thai Cuisine for our members.

Our teaching is non-religious and suitable for all.
