2 – 5 -6 oz. Fillets of Orange Roughy
1/2 C Skim Milk
2 Tbsp. Butter
1/2 tsp. Lawry’s Seasoned salt
1/2 C Breadcrumbs
1 Lg. Garlic Clove (pressed)
1/2 C Onion (chopped)
1/4 C Dry Sherry
1/3 C Tomato (seeded and diced)
1 tsp. Parsley
Fresh Black Pepper to taste
Preheat oven to 425. Grease bottom of pan, lay fresh or thawed fillets flat.
Pour Milk over two fillets.
Combine all the remaining ingredients (except the sherry) in a bowl, and divide over the two fillets.
Bake 20-25 minutes or until fish is flaky.
Plate the two fillets, add the sherry the baking pan and drizzle 1/2 over the fish.
Serve with your favorite rice dish.

Around the World with 5 Wines- Special dinner at The Italian Fisherman, Tuesday, September 16, 2014. It will present food and wine pairing for the Northwest of USA, Australia, South Africa, Argentina and Italy. The dinner costs $60 per person.
About the Chef:
Chef John Weichman has been serving residents and tourists to the Mobile area for 35 plus years. He started in 1979 with a restaurant named Constantine’s. He also opened Weichman’s All Seasons which was Mobile’s most award winning restaurant.
Chef John represented Alabama as the Director of the National Restaurant Association. He has consulted to buffet chain and small businesses throughout the U.S.
