INGREDIENTS: Italian Turkey Burgers
1 lb. ground turkey
2 tbsp. pesto
2 tbsp. finely chopped red onion
2 tbsp. finely chopped roasted red pepper
1/4 cup Parmesan cheese, grated or shredded
1/4 cup seasoned breadcrumbs
1/2 tsp. garlic powder
1 tsp. dried italian seasoning
1/4 tsp. black pepper
1/4 tsp. kosher salt
1 tbsp. olive oil
Combine all ingredients in a bowl gently with your hands being careful not to over mix. Once seasonings are distributed evenly, form four turkey patties. Press a slight indention in the center of each finished patty.
Heat 1 tbsp. of olive oil in a large skillet over medium high heat. Cook burgers for 7-8 minutes on each side. Reduce heat to medium if needed. Burger should be cooked all the way through with an internal temperature of 165.
INGREDIENTS: Balsamic Roasted Sweet Potatoes
3 lbs. sweet potatoes, peeled and diced into 1 inch pieces
1/4 cup olive oil
2 tbsp. Dijon mustard
2 tbsp. honey
1 tsp. kosher salt
1/2 tsp. black pepper
2 tbsp. balsamic vinegar
Preheat oven to 400 degrees.
In a small bowl combine olive oil, mustard, honey, salt, and pepper. Pour over diced sweet potatoes and toss well to coat. Pour onto a baking sheet lined with aluminum foil and sprayed with non stick cooking spray. Spread into an even layer. Roast for 25 minutes until nicely browned and softened. Remove from the oven and drizzle with balsamic vinegar. Toss to coat and serve.
