Banana Leaf wrapped Sea Bass

1 8 OZ. Filet of Sea Bass (or any fish)
1/4 C Herb Butter
2 Tbl. Cosmos House Seasoning Blend
1 Banana leaf – unbroken (16 in. long)
1 C Rice Pilaf
1 C Vegetable Medley

Arrange the Banana Leaf lengthwise in front of you. Sprinkle 1 Tbl. seasoning where fish will go. Put herb butter on top of seasoning.
Place fish on top of butter and sprinkle remaining seasoning on top.
Fold in Banana Leaf from sides first and then roll to wrap fish.
Place wrapped fish on grill to mark it – then place on cookie sheet.
Finish in 375 degree oven.  Should take about 15-20 minutes depending on thickness of fish.
Serve with rice pilaf and sauteed vegetables.

Art of Alabama Food Exhibit

The Compleat Studio at The Wharf, Orange Beach

The Wharf in Orange Beach, together with The Compleat Studio, celebrate the Art of Alabama Food with a gallery exhibit featuring 36 of the “100 Dishes to Eat in Alabama Before You Die.” Special events will include tastings, cooking demonstrations, book signings with some of Alabama’s best-known chefs and more.

Wednesday, Aug 6 – Saturday, Aug 9: Local Restaurant Tastes Showcase 5-7 p.m.
Local restaurants culinary skill and signature dishes will be showcased. The public is encouraged to taste test all samples and return to the restaurant of their choice for a full experience.

The exhibit and all special events are free with the exception of the Aloha Vendors with Tailgate Focus.

This exhibit not only showcases delectable dishes from around the state, but also features the chefs who create them. The exhibit highlights Alabama’s growing culinary arts community as well as local restaurants’ signature dishes to encourage business.
