Blackened Catfish with Brown Butter and Corn Grits

INGREDIENTS: 
Catfish Filets
Blackening seasoning – (cover both sides)

STEPS:
Blacken Catfish on both sides (be generous with your seasoning).  Cook in a cast iron skillet – approximately 3 minutes on each side. To Serve: Place fish filet on top of serving of corn grits and spoon sauce over the fish.

INGREDIENTS: Lemon Caper Brown Butter
Lemon Caper Brown Butter
1 Tbl. Heavy Cream
2 lbs. Unsalted Butter
1 sprig Fresh Thyme
1 1/2 Cup Chopped Parsley
2 Cups Capers
1/3 Cup Lemon Juice
3 oz. Caper Juice
Kosher salt to taste
Ground White Pepper to taste

STEPS:
In a 2 qt sauce pot bring all cream and butter to a boil and then turn down to a rolling simmer… whisking constantly while browning to a milk chocolate or slightly darker color.
After browning the butter – pull from the fire whisk a little at a time the other ingredients. Go slow – if you put too much in at once the butter can overflow and cause a fire or mess.

INGREDIENTS: Sweet Corn Grits
2 lbs. Grits
2 Bayleaves
2 lbs Cornmeal (polenta)
1 1/2 Cup Granulated Sugar
1/2 Cup Dark Corn Syrup
1 Cup Honey
1/2 lb. Butter
1/2 tsp Clove
1 tsp Allspice
2 tsp Cayenne
Salt and pepper to taste

STEPS:
Cook grits until smooth with no lumps. In a separate pan cook polenta.  Then combine them together and whisk in your remaining ingredients over a low heat. Cool and cover.

Thursday, July 31: Local Growers and Purveyors Showcase
Local growers and purveyors will sell their delectable goods to the public at this one of a kind combination event. All unsold food will be purchased by Aloha Hospitality and be distributed to their corresponding restaurants in support of local farms and small businesses.

Saturday, Aug 1: Aloha Vendors with Tailgate Focus
With football season around the corner, Aloha Hospitality will host a tailgate-themed event featuring local vendors creating an Alabama food fan out of all who attend. This event will be hosted by SEC football season radio station Crimson Tide.

Wednesday, Aug 6 – Saturday, Aug 9: Local Restaurant Tastes Showcase 5-7 p.m.
Local restaurants culinary skill and signature dishes will be showcased. The public is encouraged to taste test all samples and return to the restaurant of their choice for a full experience.

The exhibit and all special events are free with the exception of the Aloha Vendors with Tailgate Focus.
This exhibit not only showcases delectable dishes from around the state, but also features the chefs who create them. The exhibit highlights Alabama’s growing culinary arts community as well as local restaurants’ signature dishes to encourage business.

About the Chef:
Chef Thomas Wolfe has been a nationally recognized culinary professional, pioneering the creation of Contemporary New Orleans cuisine.

From childhood to present day, Chef Wolfe has used his deep New Orleans roots showcasing his culinary flavor at his newest restaurant, The Louisiana Pantry at The Wharf in Orange Beach.

When he is not in the kitchen, Chef Wolfe enjoys spending time with his wife, Tracy, and their two daughters, Madison and Megan.
