1 lb. of pappardelle pasta, cooked
1/2 cup of scallops
1/2 cup of shrimp, cleaned
1/3 cup of clams, cleaned
1/2 cup of fresh chopped asparagus
1/3 cup of fresh chopped tomatoes
1/4 cup of white wine
1 1/2 cup of tomato sauce
1 cup of heavy cream
1 TSP red pepper flakes
1/2 TSP chopped garlic
Salt and pepper to taste
Cook pasta per instructions on the box. Drain and set aside.
Heat sauté pan with olive oil; add seafood (scallops, shrimp, clams – or combination of your choice) and cook for 4-6 minutes.
Add tomatoes, garlic, asparagus and red pepper flakes; cook for 1-2 minutes.
Add tomato sauce and white wine; cook for 2-3 minutes until flavors are well-incorporated and sauce is bubbling.
Add heavy cream; cook for 1-2 minutes.
Add drained pasta to pan to mix.
Serve topped with parsley.
