Strawberry shortbread bars

1 cup all-purpose flour
1 stick butter, softened
1/2 cup granulated sugar
1/2 confectioners sugar
1 tsp. vanilla extract
Pinch of salt
1.5 cups strawberry jam
Juice of half a lemon
1/2 tsp. cinnamon

In a bowl, beat butter, granulated sugar, and confectioners sugar together with a hand mixer until creamy. Add vanilla and mix until combined. In another bowl, sift flour and salt together. Add this to the butter and sugar mixture, beating until combined.

Put dough into an 8×8 baking dish that has either been buttered or sprayed with non-stick cooking spray. Using your fingers push dough evenly in the baking dish, ensuring all corners and surfaces are covered with dough.

Bake at 350 degrees for 20-25 minutes or until lightly browned.

Remove from oven and let cool on a wire rack. Combine jam, lemon juice, and cinnamon in a small bowl. Once shortbread has cooled, spread this mixture evenly over the shortbread. Bake at 350 degrees for 20 minutes. Remove from oven and let cool on a wire rack.

Cut into squares and serve.
