Blue Marlin Cakes with creamy Alligator Sausage Sauce

1 lb aligator sausage links sliced thin
1 ½ c heavy cream
1 stick butter
1 tsp garlic minced
1 jalapeno chopped
½ c parmesan cheese
½ c smoked gouda cheese

Blue Marlin cakes:
2 lbs ground blue marlin meat
1 tbsp old bay seasoning
2 cups seasoned stuffing mix
3 eggs
2 cups oil

Combine all ingredients for the cakes mixing well, in a large skillet heat oil to about 300 degrees, take the cake mixture and devide into 6 sections and make a patty from each, 6 patties, fry the patties until golden brown on both sides. Remove cakes from oil and place in a paper towel to drain.

In a medium skillet over med high heat, cook sausage for about 3 min on each side, add pepper and garlic and cook for about 2 min while stirring, add butter and stir until butter is melted add cream and gently stir until sauce comes to a simmer, add both cheeses and stir until cheeses are melted, remove from heat.

Place cakes on a plate and top with sauce.
