Goat Cheese Stuffed Date with Bacon Onion Jam and Dehydrated Blueberries

INGREDIENTS:
Bacon and onion jam
1 tablespoon butter
3 slices thick cut bacon, small diced
2 large Vidalia onions, diced
2 tablespoons balsamic vinegar
••• teaspoon fresh cracked black pepper
Pinch of salt
1 cup brown sugar

Dehydrated blueberries
1 pint of blueberries, washed

Garnish
Julienned sorrel or basil
Pinch of Himalayan sea salt

STEPS:
Bacon and onion jam:
On medium heat, brown bacon with the butter. Add onions and saute for about 3 to 5 minutes. Deglaze the pan with the vinegar then add sugar, salt, and pepper and stir well. Simmer on low for one hour.

Dehydrated blueberries:
Set oven to 225 degrees. Layer blueberries on a parchment lined baking sheet making sure none of the blueberries touch. Bake for 2 hours and 15 minutes or until blueberries are shriveled and almost completely dried out.

To prepare the dates:
15 dates, cut in half, pit removed
8 ounces goat cheese, softened and put into a pastry bag with small tip

Cut dates in half and fill with goat cheese. Top with a small dollop of bacon and onion jam and 2 to 3 (depending on size) of dehydrated blueberries. Enjoy!

Mobile County Master Gardeners will pair local growers and producers with area chefs and caterers to celebrate the culinary bounty of our region.  Thirteen South Alabama growers and producers will provide locally-sourced produce, meats and seafood.
