Bangkok chicken

1/2 cup cut up cooked or raw chicken
1/2 cup sliced carrot
¼ cup sliced mushroom
1/2 cup sliced onion
1/2 cup sliced bell pepper
3/4 cup finely chopped fresh pineapple
1 tablespoon vegetable oil
1 teaspoon fresh minced garlic
1 ½ to 2 tablespoon soy sauce
1/2 tablespoons Oyster sauce
1 teaspoon sugar
½ teaspoon white pepper
6 to 8 pieces of Basil leaves
Dash of dried red pepper if you prefer spiciness.
1 fresh, ripe pineapple for serving (optional)

If serving in fresh pineapple, halve the pineapple lengthwise. Hollow out each half and set aside.

Heat the oil in a wok or large skillet, swirling to coat the pan.

Add minced fresh garlic. Stir to coat the pan

Add chicken and stir-fry for 1 minute (if using raw chicken, cook longer until done)

Add carrot, onions, bell, mushroom and pineapple. Stir-fry for 1-2 minutes

Add soy sauce, oyster sauce, sugar, white pepper and stir until ingredients are well combined and thoroughly heated, approximately 1 minute.

Add fresh basil leaves and dry peppers if you prefer a spicier taste.

Transfer to a serving platter, or, if using fresh pineapple, fill each half of hollowed pineapple with Bangkok chicken.

Decorate or garnish with fresh pineapple chunks, cashew nuts and fresh basil leaves.

Meditation Center of Alabama hosting public lecture called “Rewiring your brain for better relationships” on Wednesday, May 28th. It will be held from 6:30 p.m. – 8:30 p.m. at the University of South Alabama Main Library in room 181. The guest lecturer are Dr. Cay and Dr. Kent Welsh. Guest meditation teacher is Ven. Pisit from Chicago.

We have been teaching people from all walks of life to meditate and find inner peace and happiness for more than 4 years in Mobile.

Every week we offer 3 classes on Monday at 6:00 pm, Wednesday at 5:30 pm and Thursday at 6:30 pm. We also offer a free vegetarian buffet afterwards at Bangkok Thai Cuisine for our members.

Our teaching is non-religious and suitable for all.
