Crawfish and Corn Casserole

INGREDIENTS:
½ cup of butter
¼ cup chopped onion
¾ cup chopped bell pepper
8 ½ oz box of cornbread mix
15 oz corn-undrained
15 oz cream corn
8 ½ oz box of cornbread mix
3 beaten eggs
2 tbsp chopped jalapeno
1 cup of cheese of your choice
1 pound of crawfish tails
2 tbsp. of our season blend

STEPS:
Melt butter in pan.
Add onion & bell pepper and sauté until tender.
Add Garlic & sauté 2 minutes
While the onion & bell pepper is sautéing, Blend the corn, eggs and muffin mix well in a bowl.
Once you have the mix blended well and the vegetables sautéed, mix the vegetables in the muffin mix.  Blend well.  Add the crawfish, jalapeno’s and season blend. to the mixture.
Pour mixture into a greased 2 qt. casserole dish.
Top with cheese.
Bake on 350 degrees for 30-45 minutes.  (Until lightly brown)
