1 Quart of Dry Pasta of your choice (I prefer Cavatappi or Penne)
2 quarts water
Kosher Salt to taste
1/4 cup extra virgin olive oil
1 pound Alabama Gulf Shrimp peeled and deveined
1 pound Conecuh Sausage ¼ inch sliced
1/2 cup Yellow Onion – Small dice
1/2 cup Red Bell pepper – Small dice
1/2 cup Celery – small dice
3 garlic cloves – minced
1 tablespoon Kosher salt
1 tablespoon Creole Season (Zatarain’s or Tony’s)
1 tablespoon fresh thyme leaves
1/2 cup white wine – if you wouldn’t drink it, don’t use it to cook
1 1/2 cups Heavy Cream
3/4 cup shredded Romano Cheese
1 teaspoon finely chopped parsley
1 teaspoon thinly sliced green onion
1 teaspoon Creole Seasoning
1/4 cup Shredded Romano Cheese
Bring salted water to a boil in a pot. Add pasta and cook til desired doneness.
Strain and reserve.
Heat oil in large saute pan. Add Sausage and shrimp. When shrimp is half done, add onion, peppers, celery, garlic, salt, creole, and thyme. Cook until vegetable are soft. Deglaze the pan with white wine. When wine is almost evaporated add heavy cream. Reduce the cream until it coats the back of a spoon. Reduce heat, add cheese and reserved pasta. Mix gently until incorporated.
Place pasta in bowls and garnish with parsley, green onion, creole seasoning and cheese.

Seven local chefs will put their skills to the test and compete head on during the second annual Chef Showdown May 22 to benefit the Leukemia & Lymphoma Society (LLS). Cancer survivor and LLS Man of the Year candidate Bob Mobley and his Hargrove Engineers + Constructors Teammates are hosting the event from 6:00 – 9:00 pm at 5 Rivers in Spanish Fort. The event is open to the public, and it will showcase a variety of specialty dishes including fresh seafood, beef, Italian and more.
