Bruschetta Chicken

1/2 cup all purpose flour
2 eggs, lightly beaten
4 boneless skinless chicken breast halves (1 pound)
1/4 cup grated Parmesan cheese
1/4 cup dry bread crumbs
1 tablespoon butter, melted
2 large tomatoes, seeded and chopped
3 tablespoons minced fresh basil
2 garlic cloves, minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1 bunch chopped green onion
1 tablespoon lime juice

Preheat oven to 375 degrees.

Place flour and eggs in separate shallow bowls.

Dip chicken in flour, then in eggs; place in a greased 13-in. x 9-in. x 2-in. baking dish.

Combine the Parmesan cheese, bread crumbs and butter; sprinkle over chicken.

Loosely cover baking dish with foil.

Bake at 375° for 20 minutes.

Uncover; bake 5-10 minutes longer or until top is browned.

Meanwhile, in a bowl, combine the remaining ingredients and spoon over the chicken.

Return to the oven for 3-5 minutes or until tomato mixture is heated through.

St. Mary Catholic School in Mobile will host a casino night fundraiser on Saturday, May 3 at 6:00 p.m.

The fundraiser named “A Silver Screen Spectacular” features live and silent auctions, games with local celebrity hosts, door prizes and great food and entertainment.

General admission is $25 per adult in advance and $30 at the door. Special Dinner tickets are $100 and admit two adults. The night will feature the Naman’s Caterer and other local favorites.

All proceeds benefit St. Mary Catholic School.
