Shrimp and Grits

INGREDIENTS: Grits
1 cup stone ground yellow grits
1 quart whole milk
½ stick of butter

STEPS:
Bring milk to boil, whisk in dry grits and reduce to low heat. Continue to whisk for 5 – 10 minutes or until grits are soft, then whisk in ½ stick of butter, season with salt and pepper


INGREDIENTS: Red Eye Gravy
1 cup bacon fat (lardon)
1 cup shitake mushrooms, julienned
1 Tbl garlic, minced
1 medium yellow onion, julienned
1 tsp thyme
1 pint chicken stock
½ cup dark roast coffee, brewed
¼ cup green onions, chopped

 STEPS:
Render bacon. Caramelize onions, garlic and mushrooms in bacon fat. Deglaze with coffee and chicken stock and add thyme and reduce by 3/4.
Salt and pepper to taste and garnish with green onion


INGREDIENTS: Shrimp
8  Medium 15 Alabama Gulf Shrimp, peeled and deveined
½ stick of butter

STEPS:
Sear shrimp on one side for approx 2 -3 minutes or until it gets a nice sear, but not fully cooked.
Flip the shrimp and deglaze with all of the red eye gravy.
Mount butter into gravy and shrimp
Serve over grits and garnish with green onions.
