Chicken Florentine

INGREDIENTS: (Florentine Sauce Yield 2 Qts. Serves 8 people) 
1 lb. Fresh Spinach Julienned
2T Minced Garlic
¼ C Diced Onion
¼ pound Butter
¼ pound Flour
2 Cups Whole Milk
1 ½ Qt. Heavy Cream
2 Pints Chicken Stock
½ tsp Nutmeg
Kosher Salt and Pepper to Taste
8 8oz. Chicken Breasts
Olive Oil

STEPS:
Saute Onion and Garlic in Butter until translucent. Add Flour and cook for one minute creating a blond Roux .
Add all wet ingredients, while whisking to avoid lumping. Bring to a boil while stirring to ensure no sticking or browning,
Reduce to medium heat and cook for 8-10 minutes.
Add Spinach and nutmeg. Season to taste.

Season chicken breasts with salt, pepper and olive oil and Grill skin side down.  After making grill marks on chicken, finish in the oven on 350 degrees.  Place chicken on a serving dish and pour the sauce over it. Deep fry some spinach to use as a garnish. Serve with Pasta or Rice Pilaf.

Special Event:
Sunset Supper Fundraiser for the Lighthouse.  The Lighthouse is a Domestic Violence and Sexual Assault Program serving Baldwin, Escambia, Monroe, and Conecuh counties in Alabama.

The Sunset Supper will be held Friday, April 24, 2014 at 6 p.m. at the Rock Creek Golf Course Club House. Tickets are $50.  There will be food, drinks, music, a raffle, silent auction and even a fortune teller.
