Filet Mignon with spiced rum pears and Pecorino cheese

Filet mignon 8oz
Clarified butter 2oz
One pear diced
Heavy cream 1oz
Spiced rum 1oz
Pecorino cheese 1oz
Parmesan cheese 1 oz
Walnuts 1oz toasted

Sear steak in sauté pan with butter
Cook to desired temperature
Sauté pears in pan
deglaze pan with rum
Add cream and cheeses
Top steak with pear cheese sauce and toasted walnuts.
