Shrimp stuffed quail breast wrapped in bacon


6 Boneless Quail Breasts
1 stick Butter
1/2 cup chopped Onion
1/4 cup dried parsley
1 teaspoon salt
1 teaspoon black pepper
3 cups soft bread crumbs
1/2 cup cream sherry
3/4 cup chopped raw shrimp
3 pieces sliced bacon
1 teaspoon dried rosemary
1 teaspoon seasoned salt
1/2 cup apricot jam

1. saute’ chopped onion in butter until opaque.
2. Add the parsley, salt, pepper, soft bread crumbs, cream sherry and chopped raw shrimp; mix to make a stuffing
3. Separate the skin from the quail breast and put 1/4 cup of stuffing underneath the skin.
4. Wrap the stuffed quail breast in half a piece of sliced bacon.
5. Put in baking dish or pan and bake at 350 degrees for 25-30 minutes.
6. When the breast is done ( 165- 170 degrees internal temp) brush with warm apricot jam and serve immediately.
