Chef Scott Dumas from Pinzone’s Italian Village in Downtown Fairhope is making Florentine puff pastry with a side of fruit in a mint vinaigrette.
INGREDIENTS: Florentine puff pastry
2 Sheets of Puff Pastry
1/2 oz. Spinach
2 Slices of Provolone
1/4 oz. Bell Pepper
1/4 oz. Onion
2 slices Ham
2 slices Turkey
Lay out one layer of puff pastry dough onto sheet pan then alternate layers of the remaining ingredients. Cover with second layer of puff pastry. Crimp the sides to seal dough.
Bake at 375 degrees until golden brown.
INGREDIENTS: Fruit in mint vinaigrette
1 tablespoon Mint
3 oz. Olive oil
1 oz. Vinegar
In a small bowl, whisk together olive oil, vinegar and mint. Drizzle over assorted fruit and feta. Toss gently to coat. Serve cold or at room temperature.
