Thai Pineapple Fried Rice with Tofu

1 fresh ripe pineapple, for serving rice (optional)
1 1/2 cups cooked long grain rice, or brown rice
3/4 cup cut up Tofu (slightly deep fried)
1 or 1 1/2 tablespoons vegetable oil
1 egg (Vegan can omit)
1 small onion, finely sliced or diced
1/3 cup sliced carrot
3/4 cup finely chopped fresh pineapple
2 tablespoons thin soy sauce
1 tablespoons Oyster sauce
1 or 2 teaspoon sugar
½ teaspoon white pepper
Dash of dried red pepper if you prefer spicyness
1 green onions, thinly sliced and cut up
Dash chopped cilantro and chopped green onions

If serving rice in fresh pineapple, halve the pineapple lengthwise, Hollow out each half and cut the fruit. Save 1 cup for stir frying and 1 cup for garnishing. Set aside.

Heat the oil in a wok or large skillet, swirling to coat the pan.

Crack egg (if using) into wok and stir quickly (scrambled eggs style). This step can be skipped if you are vegan.

Add tofu, carrot, and onions. Stir-fry for 1-2 minutes.

Add rice, pineapple chunks, soy sauce, oyster sauce, sugar, white pepper and stir until ingredients are well combined and rice is thoroughly heated, approximately 3 minutes. Add dry peppers if you prefer a spicier taste.

Transfer to a serving platter, or, if using fresh pineapple, fill each half of hollowed pineapple with fried rice and garnish with extra pineapple chunks.

Decorate with pineapple chunks, chopped cilantro and green onions.
