INGREDIENTS: Salmon, cucumber and dill salad
1 1/2 lbs salmon filet, cut into 4 pieces, skin and bones removed
1 TBS *Champagne Garlic Mustard
1/2 TBS *Orange Blossom Honey
1 large cucumber, peeled (if not organic), cut in half lengthwise, seeds scooped out, diced in ½ inch cubes
1 large ripe fresh tomato, diced
1 medium ripe, but firm avocado, diced in 1/2-inch cubes
2 TBS chopped fresh chives (or 2/3 tsp dried chives)
1 1/2 TBS chopped fresh dill (or 11/2 tsp dried dill weed)
½ TBS *Sicilian Lemon White Balsamic Vinegar
1 TBS *Garlic EVOO (extra virgin olive oil)
*Lemon Pepper Sea Salt and cracked black pepper to taste

STEPS:
Preheat broiler on high and place a skillet or cast iron pan under the heat for about 10 minutes to get it very hot. The pan should be 5 to 7 inches from the heat source.

Rub salmon with 1 TBS *Sicilian Lemon White Balsamic Vinegar, *Lemon Pepper Sea Salt and pepper.

While pan is heating, mix together cucumber, tomato, avocado, chives and dill in a bowl and set aside.

Whisk together 1 TBS Sicilian Lemon White Balsamic Vinegar, 2 TBS *Garlic EVOO, *Lemon Pepper Sea Salt and pepper in a separate bowl. Toss with cucumber mix when ready to serve.

Place salmon on hot pan and cook for about 7 minutes, depending upon thickness. Combine *Orange Blossom Honey and *Champagne Garlic Mustard and coat salmon during last 2 minutes of cooking.

Divide cucumber mixture between 4 plates and serve with salmon.

2 TBS *Hojiblanca Mild EVOO (extra virgin olive oil)
1 TBS *Fig Balsamic Vinegar
1 TBS *Champagne Garlic Mustard
½ cup chopped walnuts
½ cup fresh raspberries
Fresh raw spinach

STEPS:
Add *Hojiblanca Mild EVOO, *Fig Balsamic Vinegar & *Champagne Garlic Mustard into a small bowl & whisk (or into a mixing bottle & shake).

Drizzle over spinach

Sprinkle chopped walnuts and raspberries over spinach

Toss salad with all ingredients and serve

2 TBS *Herbes de Provence Olive Oil
1 TBS *Cranberry Pear White Balsamic Vinegar
1 TBS *Champagne Garlic Mustard
1 purple onion, chopped
Fresh romaine lettuce

STEPS:
Add *Herbes de Provence Olive Oil, * Cranberry Pear White Balsamic Vinegar & *Champagne Garlic Mustard into a small bowl & whisk (or into a mixing bottle & shake).

Drizzle over romaine lettuce

Sprinkle chopped onion over lettuce

Toss salad with all ingredients and serve
