Crawfish bisque

1 Medium Onion, diced
2lbs Crawfish tails
1 Cup Diced celery
4 Garlic cloves
1 Stick of Butter
12 Cups of Chicken broth
4 Cups of Heavy cream
1 ½ cups Corn starch
3 T Tony’s Seasonings

In a medium pot, sauté onions and celery in butter for 1 minute.  Add Tony’s seasoning and chicken broth then bring to a boil.

In a bowl, whisk corn starch and heavy cream together.  Slowly add mixture to pot and return to boil.

Chop crawfish tails and add to broth.  Serve hot.
