Simple Garden Fresh Salsa and Parmesan Bread Crisps

Jim Todd and Ellen Huckabay from the Mobile Office of the Alabama Cooperative Extension System are in the Studio10 Kitchen making salsa and bread crisps.  They are also talking about a new series of classes for the home gardener called the Naturally Smart Gardener.

INGREDIENTS: Salsa
2 red tomatoes, chopped
1 jalapeno pepper, finely diced
1 clove garlic, minced
¼ to ½ onion, diced
up to ¼ cup cilantro, chopped cumin, kosher salt, black pepper, and cayenne pepper to taste

STEPS:
Combine all ingredients, refrigerate for several hours before serving for best flavor.

INGREDIENTS: Parmesan Bread Crisps
1 French baguette
¼ cup olive oil
Italian seasoning
Grated Parmesan cheese

STEPS:
Preheat oven to 350. Cover a baking sheet with tin foil. Slice the baguette into ¼ inch pieces on the diagonal. Brush olive oil on one side of bread slices, sprinkle with Italian seasoning and cheese. Bake for 5 to 10 minutes until crisp. Remove from oven, flip the bread pieces, and repeat the olive oil/seasoning/cheese. Bake for 5 to 10 more minutes until crisp.

SPECIAL EVENT INFORMATION:
The Mobile Alabama Cooperative Extension System is offering a series of classes for the home gardener called the Naturally Smart Gardener. The classes will be every 3rd Tuesday from February to September, 5:30 – 8:00 pm.  The fee is $20 per session or $150 for the whole series. The price includes a light dinner and publications. The 8 classes will be conducted by Regional Agent Ellen Huckabay and Regional Agent James Miles of the Alabama Cooperative Extension System.

The classes will cover all aspects of home gardening from building a healthy soil and planning your garden, to pest management and how to make the best use of your harvest, all with an environmentally friendly natural approach.

About the Guests:
Jim Todd is the County Extension Coordinator providing leadership for the educational programming of the Mobile County office of the Alabama Cooperative Extension System.  His program areas include agronomy, horticulture, and community resource development.

Ellen Huckabay is the Regional Extension Agent for home grounds, gardens, and home pests in three Southwest Alabama counties: Mobile, Clarke and Washington; She is the Master Gardener Program coordinator for Mobile County. She develops home garden educational programs and workshops for the citizens of Southwest Alabama.
