INGREDIENTS: RSA Tower Burger
8 oz. Mosley’s Omaha fresh ground beef patty
Braised red cabbage (recipe follows)
Sear your patty in the pan to desired wellness (Medium rare retains the most moisture and flavor).
While burger is cooking, put some olive oil or butter in a separate sauté pan over medium high heat. Once the oil is hot, add the onion slices and stir to coat the onions with the oil. Spread the onions out evenly over the pan and let cook, stirring occasionally. You want to cook the onions slow so you may need to reduce the heat to medium or medium low to prevent them from burning or drying out. Make sure you season them with some salt. Cook for about 10 minutes until they are soft and brown.
About 5 minutes before you are ready to serve, fry your egg. Melt some butter in a skillet over medium high heat then break your egg into the pan. Reduce the heat to low and season the egg with salt and pepper. Cover the pan and cook until the white is set and the yolks are just beginning to firm around the edge, about 5 minutes.
Just before your patty is done, put a slice of Swiss cheese on top to melt it.
Place burger on brioche bun and top with the rest of ingredients. Serve immediately.
INGREDIENTS: Braised Red Cabbage
2lbs sliced red cabbage
1 Green apple, halved, cored and sliced
3 T Apple cider vinegar
1 t Cloves
4 T Sugar
1 T Butter
1/2 cup Water
Salt and Pepper
Melt butter in a heavy pot over medium heat. Add apples and cook until apples are softens. Stir in red cabbage and season with salt and pepper. Add cider vinegar, sugar, cloves and water. Bring to a boil then reduce until red cabbage is tender, 20 to 25 minutes.
Taste and season with additional salt, pepper and sugar.
INGREDIENTS: Van Antwerp Salad
Bleu Cheese Crumbles
Cooked bacon pieces
Granny smith apples
Tear lettuce into bite size pieces and add to serve bowl.
Then add spinach, bacon, pecans and dried cranberries.
Dice the apple and add on top, then sprinkle salad with bleu cheese.
Drizzle with vinaigrette dressing.
